Mix together cornflour
and water and cook over low heat, stirring constantly until it begins to
look transparent. Place the mixture into a colander, place it over the
pan containing ice water. Now with the back of wooden spoon press the
mixture through. The pieces will fall into the ice water and solidify.
Keep aside for 30 minutes, then strain. Heat milk and sugar and chill.
Place 2 tsps of tulsi seeds, 2 tbsps cornflour falooda, in the bottom of
each glass. Add rose syrup and crushed ice. Pour in the cold milk. Place
a scoop of vanilla ice‑cream on top. |

Note: There are many Indian summer drinks but this one
is a favourite of all. It gets its name from the cornflour vermicelli
that floats in it. Many people replace it with tiny pieces of jelly made
of 'China Grass'. But easy substitute is 'cellophane' noodles (bean
starch noodles), they are soaked and boiled until transparent, then cut
into short length. Falooda can be served as a dessert. |

Grind coconut,
ginger, chilies and salt together to a smooth paste. Add plain yoghurt
and mix well. Add tomato pieces. |

Heat oil and fry
mustard seeds until they pop. Pour over the plain yoghurt mixture. Stir
well. Chill before serving. Garnish with coriander leaves. |
